New to the appellation of St.Véran since 2008, the Madame Noly vineyard is located in the village of Chasselas, on a hillside south/south-west facing, with some clay over the stony limestone. Covering 1.23 ha, the vines here were planted between 1955 and 1960. The sorting at harvest (by hand) is severe and the harvested product is outstanding and provides excellent complexity. Bunches of grapes are laid directly in the pneumatic press and pressed slowly at low pressure. The long vinification is done mostly in stainless steel tanks with 10% done in barrel at low temperatures. The "Madame Noly" is characterized by its aromas of unique mineral and floral notes, different from those of the domaine’s other cuvées.
