In the wine making, Dan employs a traditional, non-interventionist approach, hand harvesting and treading the grapes by foot and fermenting with native yeasts, selecting a mere 30% of the barrels for the final bottling and sealing the bottles with top quality cork in lieu of screw caps. A co-fermented blend of Shiraz with 2% Viognier, the 99 pt 2018 The Relic boasts “fleshy, deep-set fruit flavors and a gently spicy thread” according to James Suckling that’s “full bodied yet approachable,” the Viognier adding pleasing aromas and softening tannins. Crafted from 100% old vine Shiraz, Dan aged the 100 pt. 2018 The Standish in mostly used oak barrels seasoned for 48 months, yielding “terrific buoyancy to the fruit” and “a ripe but powerful tannin structure” according to Decanter’s Sarah Ahmed, with a complex, lingering finish.
