Landlocked Umbria is a lesser traveled gem among Italian wine regions divided by the spine of the Apennine Mountains, its northern reaches near the Tuscan border home to Marchesi Antinori’s magnificent medieval Castello della Sala estate. Spanning a total of 600 hectares, the estate’s 240 hectares of hillside vineyards are situated at an altitude of 220 - 470 meters above sea level, planted in mainly clay and calcareous soils and rich in fossil shells that contribute a distinct minerality to the Cervaro. Composed of mostly Chardonnay matured in a mix of new and used oak barrels and 7% Grechetto fermented exclusively in stainless steel, the enticing 2021 Cervaro della Sala was blended in stainless steel vats before spending several months in bottle prior to release, yielding “a dramatic Cervaro della Sala that has amazing balance” with “silky, verging on creamy textures” according to Eric Guido of Vinous, who sums it up as “pure elegance.”
