Managing nearly 150 hectares of estate vineyards planted up to 450 meters above sea level, Antonini's more traditional, non-interventionist approach has resulted in a steady rise in quality over the past decade, transitioning to organic practices to foster naturally healthy vines and replacing modern oak fermenters with cement vats in the cellar to accentuate freshness. Employing a long fermentation with indigenous yeasts in large cement tanks, Antonini aged the 2019 Dievole Chianti Classico in large untoasted French oak casks for 14 months with three additional months in bottle, crafting a perfectly balanced Chianti expressing pure Sangiovese character with energetic acidity and a silky, harmonious finish.
