Bordered by coastal Liguria to the south, the Monterotondo vineyard benefits from the maritime influence resulting in warmer days balanced by cooler nights, optimal conditions for ripening Cortese while preserving acidity. Overseen by agronomist Federico Curtaz, formerly of Gaja, the vineyard features clay marl alternating with diluvial and gravel soils, resulting in increased concentration of flavor in the grapes. Renowned enologist Beppe Caviola (whose other Piedmont clients include Damilano, Luigi Einaudi, Albino Rocca and Vietti) leads the winemaking, fermenting the Monterotondo for three weeks in stainless steel. It then spends two years of aging in oak barrels before being transferred to Villa Sparina’s distinctively shaped bottle, producing a complex Gavi with harmonious structure balanced with refreshing acidity and consistency.
