Distilled from beer and aged for one year in new oak casks, this small-batch whisky is bright and distinctly fruity. The aroma is mild, mixing caramel with a hint of red fruit. The plush palate shows more red fruit and black cherry, drying to cocoa, leather, oak, black pepper, cayenne and clove. Quite a bit of dilution is needed to bring down the alcohol sting, which unfortunately fades out the lovely fruit and brings a more generic vanilla profile forward.

Water brings out red fruit notes of raspberry and cherry, grape juice, cinnamon toast, cider donuts, dark chocolate, and bitter espresso. Peanut notes merge well with caramel and a hint of spice. Almond, drying cocoa, more red fruit, and spice end things with a flourish.

This amber whiskey is made with 95% rye, which puts it on the very high-rye side of the spectrum, and gives it a spicy zip. In some ways, this evokes an ultradry version of an orange liqueur, with juicy orange notes dusted with black pepper, clove, nutmeg and a faint hoppy note.

It’s brisk, vibrant, and loaded with spice (crisp mint, warming cinnamon, cocoa, hint of anise). Fruit — ripe nectarine, apricot, golden raisin — drizzled with maple syrup. Dry oak rounds out the finish. Bold enough for cocktails. Mature enough to drink neat (or on the rocks).

The sweetness jumps up on the palate, with candied apple, honey throat lozenge, chocolate syrup, and cinnamon-sprinkled French toast. The lengthy finish is light, rich, and well spiced. At 5 years old, this Tennessee-made whiskey shows balance and buoyancy.
