But with ice water, everything changes – it cools and become more classically Pernod-like, with a lighter flavor and texture, and a burst of licorice on the finish. The assertive note would stand out well when used to rinse a glass for a drink like a Sazerac.

Look for a warm, honeyed flavor and a nice burst of orange peel and spicy cinnamon and ginger on the long finish.
