Most of this is pinot noir from Aÿ and Verzenay, cold macerated with its skins to bleed color into the wine, then fermented with 35 percent chardonnay from Oger and Cramant. The skin maceration gives it pomegranate-red fruit and a brisk, bitter orange note, a refreshing, clean and direct combination to start a dinner party.
