The 2025 Rubentis is very herbal, green and spicy, not to mention completely alive in the glass. Tomato leaf, basil and green apple tones meet with a wash of spritzy, slightly effervescent textures, all braced by tart, salty acids. That green character rides atop everything else, but it makes the Rubentis feel very distinctive.
