Proof that white rum is now a serious category for connoisseurs, Probitas is a next-level offering in every way. A collaboration between two of the Caribbean’s most revered distilleries, it’s a captivating blend of unaged, Coffey column-still and two-year-old, pot-still juice from Barbados icon Foursquare (the aged component lending it a faint, light gold hue), along with unaged, pot-still distillate from the legendary Hampden estate in Jamaica. The nose immediately draws you in with aromas of ripe banana, candied tropical fruits like pineapple and papaya, butterscotch, and crème brulée tones, all with a subtle underlying industrial funk from the Jamaican pot-still component. The palate truly sets the Probitas apart in its price tier. That signature Jamaican funk is on full display now, with flavors of lime cordial, coconut cream, and more candied tropical fruits standing up on a foundation of surprising weight and viscosity that indicate its top-flight pedigree. Of course, it can make a profound base for any classic tiki cocktail, but it has the substance that practically demands to be enjoyed neat or with a cube (if you must).
