Here’s a great marriage of the red-slate villages of Urzig, Erden, Lösnich and Kinheim. After a traditional vinification in large fuder and 12 months on the lees, Bernhard Schug bottles a wine of clarity and elegance, a riesling that will cut through fatty fish. Bring this to a BYOB omakase or, better yet, serve it with Iberian tinned fish.
