Located on the outskirts of the village of Chablis, Domaine Servin is one of the oldest family run estates in the region with a history of winemaking dating back two centuries, led by 20^th generation Francois Servin and his Australian-born winemaker Mark Cameron. Spanning over 35 hectares with most of the Chardonnay vines over 40 years of age, Domaine Servin’s vineyards are located in some of the top terroirs across the appellation including six 1er and four Grand Crus, with even its village level cuvee sourced from a single 11 hectare parcel that is considered on par with its 1er cru neighbors Montmains and Vosgros. Described as “rich and seductively textured” by Burghound’s Allen Meadows, the entry level 90 pt. 2021 Servin Les Pargues offers crisp, fresh fruit hinting of chalky minerality balanced by “racy acids and a long, saline finish” according to the Wine Advocate’s William Kelley. The 2021 Chablis 1er Cru Butteaux has also turned out very well, delivering aromas of sweet citrus oil, peach, beeswax and oyster shell, followed by a medium to full-bodied, satiny and layered palate with good depth and concentration for the vintage. This cuvée is generally very reliable chez Servin, and the 2021 is no exception.
