The 2021 Savatiano is unoaked, very dry and comes in at 12.4% alcohol. It was sourced from old bush vines (around 55 years in age) in Keratea Village. Richer and more unctuous in texture but not as intense as its sibling (the Naked Savatiano this issue), this is a different if equally impressive performance this year. This leans more to its fruit, while the Naked Savatiano leans more to structure. In its youth, the purity and freshness make this regular version seem particularly superb. Hopefully, it will hold serve as it ages a bit, and it needs to do so to justify my initial enthusiasm. It finishes with flavor and fruit nicely lifted by the acidity. This will also be terrific this summer. It's a classic fresh white with a bit of distinction. While I am pretty sure it will hold well for several years, by the way, that may not necessarily be its highest and best use. We'll see, but don't hesitate to dive in now and over the next year or two.
