The 2019 Kallisto is the typical 80/20 blend of Assyrtiko and Robola, unoaked and coming in at 12.6% alcohol. This has become a go-to value over the years. It is solid and substantial in the mid-palate, while projecting fine flavor on the lingering finish, with some aromatics up front. This has the stuffing to hold up to foods if they are not too spicy. It also will go great on its own as a porch-sipper—although there, it might have some competition from the winery's Foloi this issue. This can easily hold a few years, but drinking it now and in its first two or three years might be a better idea. It is worth leaning up for the moment. There were just 8,000 bottles produced.
