Gilbert's white estate 2019 Menetou-Salon comes from 25-year-old vines on clayey-limestone soils form the Kimmeridgian era. Aged on the fine lees in stainless steel for 10 to 18 months, this is a clear and aromatic yet still lean and pretty reductive Sauvignon Blanc with stony notes and an intense fruit core. Round and quite juicy on the palate, with a yeasty texture and rather mild but lively acidity, this is a promising wine for this spring and summer. Asparagus, shellfish, raw or broiled fish, but also goat cheese and sorbets should go well with this stimulating wine, as Philipp Gilbert suggests. Tasted in February 2021.
