A dark, extracted xinomavro, fermented with ambient yeasts and aged 18 months in oak barrels, this balances its full-throttle fruit with notes of mushrooms and black tea. A little volatile acidity adds lift, but this is a wintry red, suited to beef stew with mushrooms.
