Sometimes referred to as "baby Amarone," Ripasso does use the same combination grapes, capturing similar aromatics, textures and flavors, creating a more versatile food wine that is most affordable. Castellani's Ripasso is among the very best produced. Think risotto and hearty pasta dishes; porchini mushroom risotto or veal shank with herbs.
