Paul Lato has been turning out wines of "authenticity, harmony, and elegance" from his eponymous winery in Santa Barbara for decades. His first mark on the wine world came while working in Toronto. One of the top Sommeliers in town, Paul's services were in high demand. Paul's first visit to California in the early 1990s introduced him to Jim Clendenen. Jim offered Paul an internship and began introducing the soon-to-be-famous winemaker to the top growers in the region. By 2004, Paul settled in Santa Maria, his first winemaking gig at Bien Nacido, living in the bunkhouse. But each day brought another opportunity. Meeting the greatest growers in the region, Lato learned from the most passionate producers in the state. His star ascended quickly; when he launched Paul Lato Wines, it was an overnight success. So when John and Gillian Wagner launch their dream winery – Peake Ranch – a couple years ago in Santa Barbara, their choice in winemaker was easy. No one knows this region, is as closely tied to its top sites, as Paul Lato. Together, they are producing wines which will take your breath away. As Jeb Dunnuck says, you wouldn't expect anything less with Lato in the cellars. |
