More assertively aromatic than xarello has any right to be, Essential is rich in notes of peaches and cream, the bubbles so soft they seem to caress the tongue. The peach flavors evolve along with nuttiness, making it easy and pleasant to drink.

There is a new 2013 Essential produced exclusively with Xarello grapes that is very balsamic, perfumed and aromatic, even minty with little influence from the autolysis. The palate is sharp, with noticeable acidity and medium-sized bubbles. It matured in bottle for some two years, but there is no disgorgement information on the label, and it indicates Brut, but only has some three grams of residual sugar. 57,000 bottles.

Light, bright yellow. A complex bouquet evokes pear skin, fennel and honey, with vibrant mint and ginger nuances. The fleshy, broad palate conveys dried orchard fruit, lemon pith flavors and a touch of tarragon on the back half. Closes with firm, stony cut and good persistence, leaving a spicy, gingery note behind. I'd serve this rich-but-nervy Cava with a rich shellfish dish.
