Herbal on the nose with kiwi and lush grass, the smoke showing distinct mineral qualities; almost metallic, with sage leaves, green olive, shredded ginger, and pea shoots. The palate shows green apple, lime juice, Szechuan pepper, and gooseberry, then sweet grapefruit and layers of herbs. The smoke is barely there until the finish, which is generously fruity with gentle woodsmoke and fresh herbal notes.
