This Islay favorite needs no introduction, so let’s just jump right into this six-hogshead run from Single Malts of Scotland. The aromatic profile is classic Caol Ila with a very fine peat character reminiscent of slow-smoldering barbecue pit, a fine foundation for high-toned notes of salt spray, lemon confit, and wet stones, and tropical fruit. Extremely approachable with no heat whatsoever. The medium-weight palate gives up that same refined peat character but with a bit more intensity now, akin to a rolling campfire, with related flavors of gunflint and hot stones. A drop or two of spring water unlocks further complexity, as aromas of sarsaparilla, lanolin, vanilla bean, and cocoa nib all show up. The palate stays smoky all the way, with opulent touches of citrus marmalade and vanilla pod on a finish that gets longer and longer with more time in the glass. If you’re a Caol Ila fan, you can add this one to your list of favorite expressions, as it offers up everything you’re looking for from the Islay legend, in unique yet familiar fashion.
