Amber color. Aromas and flavors of candied black cherries, maple and Corn Pops, leather, and cinnamon poached pear with a round, crisp, dryish medium body and a tingling, charming, medium-length finish with notes of cinnamon and vanilla roasted almonds, maple brown sugar, cherry pipe tobacco, and cocoa powder. Rich and aged with good fruit, barrel, and sweetness in balance; an excellent everyday companion Rum.

Sliding into that sweet spot between the Two Oaks and the top-tier Centuria, the Three Angels 12 Year Old Añejo is a selection of heavily charred American oak barrels from the top rack in the rickhouse that takes the Two Oaks profile up a notch while maintaining a bit more energy and verve than the super-opulent Centuria. Pouring dark amber in color, it puts out an immediately expressive bouquet of stewed cherry compote, caramelized Anjou pear, sweet pipe tobacco, coconut cream, and fragrant wood resin. After 15 minutes or so in the glass, the fruit component takes a back seat to charred red pepper, smoky minerality, crème brulee crust, toasted vanilla pod, salted caramel, and honey-glazed ham. More weighty than the Two Oaks on the palate, the flavor profile is initially centered on bananas foster and grilled pineapples, accented by very deep baking spices tinged with smoke. Like on the nose, the fruity component fades to the background (but doesn’t disappear), and the flavors become much more spice driven with nutmeg, hazelnut, and a touch of bitter walnut skin on long finish. The distillery has pulled off a most impressive feat in not allowing the character of the barrels to overtake the style of the spirit – instead, it just adds multi-layered intrigue to the classic Panamanian rum profile.
