This is really fantastic and the extra time in the bottle gives it such wonderful richness and layers on the palate. It's full and creamy-textured with softness and tension at the same time. The pie crust and hints of yeast autolysis gives this intensity and verve. Eight years in the bottle on yeast instead of three years. 1.5g/L. Drink or hold.

Based on the 2014 vintage, the NV Champagne Cuvée 742 Degorgement Tardif was aged 96 months on the lees and then held back another year before release. It has a crisp and crystalline character, with that added polish of extra aging. I love the character of this wine, which has a super-refined and polished mousse, delicately rounded edges, and a long finish. Its texture is delicate and creamy, while retaining its really precise feel and incredible, laser-like focus, but it’s fully dry. Very well-balanced, this is a superb offering that I would love to have in my own cellar. Drink over the coming 20 years. Disgorged in April of 2023

Crafted from vines planted in Aÿ, Dizy, Hautvillers and Champillon (59%) and 41% in Avize and Oiry, the NV Extra-Brut Cuvée No. 742 Dégorgement Tardif, matured for 96 months on the lees under cork, reveals a subtle, complex bouquet of exotic fruits, honey, beeswax, ripe orchard fruits, chamomile and herbs. Medium to full-bodied, sappy and textured, it has a vinous, fleshy core of fruit, racy acids and a saline, delicate mid-palate, leading to a long, mineral and ethereal finish. Disgorged in April 2023 with 0.5 grams per liter dosage. This is a Champagne for gastronomy.
