Beginning with the striking, pale copper color, this is very unconventional rosé champagne. Wonderful fruit aromas that range from cherry and wild strawberry to persimmon and candied orange with a touch of sushi ginger. Then comes the mouth-filling and well-structured palate that has an amazing grainy-chalky feel to it, unlike anything else in this category. Very long, saline finish. A cuvée of pinot noir with a small amount of chardonnay that was vinified in amphoras. From organically grown grapes. Drink or hold.

The NV Dame-Jane is simply gorgeous, evoking aromas of tangerine, spices, red berries, peony, rose and herbs, followed by a medium-bodied, vinous and layered palate with bright acids and a satiny, tense mid-palate enhanced by a phenolic core of fruit with a superb gastronomic bitterness. Macerated for eight hours and matured in amphorae and sandstone containers, this blend of 90% Pinot Noir and 10% Chardonnay was disgorged in January 2024 with a dosage of five grams per liter.

The NV Dame-Jane is exquisite. Soft, layered and super-expressive, this has a ton to offer. Crushed red berry fruit, orange peel, spice, mint, cedar and rose petal caress the palate. Dame-Jane is 100% Pinot Noir that sees a light pressing of about eight hours. A touch of still Pinot is then blended in, and the wine is aged in amphora. It’s a quirky wine, but time in the glass does wonders. Dosage is 5 grams per liter. Disgorged: March 21, 2023.

Vinified entirely in amphora, the Dame Jane NV is a Pinot Noir rosé that includes a portion of perpetual reserve Pinot Noir, plus a small percentage of Chardonnay added with still Pinot Noir in the final blend. Bursting with aromas of juicy red fruit, spice, anise, orange peel and toast, the medium-bodied, creamy palate has a savory red fruit, spice and honey core enlivened by a precise line of acidity. It is a refreshing, gastronomic rosé that finishes long with a tannic hint of red apple peel.
