The flagship Machir Bay from Kilchoman is a well-constructed single malt with classic Islay character finished in 70% ex-bourbon and 30% ex-oloroso casks, perfect for pairing with smoked oysters. If you’ve ever wondered about that one, give it a go with this lovely dram and you’ll be forever hooked. Pale gold in color, it rushes out of the gate with evident peat, intense lemon peel, and dried grass. It’s a touch hot, so a drop or two will go a long way, unlocking further notes of vanilla, ginger, white pepper, and pistachio, chalky minerality, and of course, that Islay sea spray. The palate comes in with more intense peat than the nose, balanced by lemon confit, lemongrass, tarragon, and oceanic salinity. Subtle flavors of slate and white peppercorn emerge as the lengthy finish shows off a lovely combination of slate and high-toned peat with touches of dried flowers. If you’re a fan of quintessential Islay, this one is a home-run.
