Smoke and salinity simmer from the start, though aromas of sweet barbecue, nougat, simple syrup, orange peel, and a little must swirl about in equal parts. If the nose is a pencil drawing of flavor to come, the palate opens up into an oil painting—vivid notes of char, fig, black pepper, and Gala apple abound. Cassis, raisin, dark chocolate, orange oil, and soft ashy smoke make for an enchanting finish.
