This IPA is remarkably smooth and balanced, with attractive aromas of fresh hop, orange rind and pretzel-like malt. Pine-driven spice and grapefruit citrus lead the medium-weight mouth, with a good amount of drying astringency lingering on the close alongside flavors of toasted biscuit and peach pit.

Mildly hazed golden color; tight, tiny bubble lace. Quite fragrant with orange rind and faint butter, with a semisweet biscuity malt. The hop bitterness pushes the palate around for the duration, but never knocks the taste buds down completely. The hops are rough around the edges, but never harsh, with orange and evergreen flavors. Malt chimes in with a dense breadiness and toasted biscuit flavor, yet never really rises above the hops. Alcohol is there, lightly warming with an offshoot of buttery flavor. Orange rind hop in the finish with more of that toasted biscuit flavor, which all lands semisweet. Nice to see a change thrown at the beer industry, giving the bird to modern brewing on their home turf, yet fitting very well within the US craft beer revolution. Sure, it's not your kick-in-the-teeth West Coast IPA, but it is a damn good rendition of IPAs in the US collectively. With each sip, it grew on us.

A tan thunderhead of foam rests atop this bronze ale. Smells of melon, flowers, fresh herbs; one of the most beguiling bouquets in beer. At 9% alcohol, almost wine-like. Opulent, sweet, honey-wheat flavors envelop the palate at entry, then at midpalate tastes of pears and peaches are added. Finishes sweet, ripe and fruity.

Raw sweetness, peppery spiciness and light phenols. Soft powdery mouth feel with a crisp carbonation and medium body. Smooth. Very evident clove flavour up front and stays around throughout the beer. Hints of birch and ginger beer-like flavours, peppery medcinal phenols and light herbal tea hop flavour. Quite malty but it stays in the back. Fruitiness is likened to a delicate date sweetness and ripe plum. As the beer warms, there's also a suggestion of chocolate/carob. Finish dries a little though still a bit of residual sweetness leftover, herbal flavours also. We can die now. It's okay. Drinking this beer has made the cylce of life complete.

Hazed golden straw with a very active carbonation that holds the firm white lace together. Ripe apple skin and medicinal aroma with some pale grainy malt and earthy yeast. Richly textured with the ultra smooth and highly crisp mouth feel, carbonation is high though it is the perfect fixture and helps a bit in drinkability. Hop bitterness is quick but somewhat potent which is followed by an earthy yeast that has a soft powdery quality to it. Big fruitiness, with bold yet suitable alcoholic esters that don’t get too flamboyant. Alcohol is a bit illusory, you know its there but not at the 8.0% level. Grainy maltiness with hints of raw orange blossom honey and a good dose of medicinal phenols. Touch of sweetness upfront but eternally dry in the finish. This bottle has peaked and I am glad I had it now and not later down the road.

Most people that enjoy beer have only experienced one Trappist brewery in their life, if they have experienced any at all: Chimay. The most well-known Trappist brewery (at least in the States) is the producer of three different beers. It is up for debate which of these is the best, but we would like to make an argument for their tripel, which is also known as Cinq Cents in the 25.4 fluid oz bottle. The aroma of this beer starts with spicy notes and the fragrance of dried peaches. The taste is akin to the aroma with the malt coming off clean and dominant. The smoothness of this beer gives way to a clean and surprisingly dry finish. This may be the lightest color beer in Chimay's repertoire, but it is certainly not lacking in flavor.

Inviting dark colour with good lacing, big fruity and alcoholic aroma. Smooth and creamy on the palate with a mellow up front sweetness, mild apple like tartness and a mix of medicinal herb, spicy alcohol and slight grain in the dry finish. This is one Belgian that I'll be going back to for sure.

Nocturnum’s aroma isn’t nearly as fleeting as its off-white head: Banana and mango sweeten wafts of toasted bread that grab the nose. Above a bready base, bubblegum flavors and hints of pineapple and banana stretch out alongside peppery spice. Subtle licorice emerges mid-sip, balancing the beer’s overt fruitiness, and combine with the pepper and a bitter bite to punctuate the finish. Fruit and spice stick around long after the swallow, making this beer an excellent showcase of Belgian yeast.

Bright yellowish hue, good lace effect that holds most of the way. Sweet and phenolic aroma and flavour, peppery and fruity on a moderate body. Faint refined honey-like malt flavours mingle with the reserved yet concrete hop bitterness. Drying finish shows the alcoholic esters as well as some solvent higher alcohols that seem to leave as quick as they came in. A deceiving treat, as it will catch up on you if you don’t watch out, deceiving alcohols come through the back.

Dressed in pink elephants, Delirium’s bottle pays homage to a time when these mammoths were associated with drunkenness (appropriate, considering this beer’s loaded with alcohol). Delirium pours pale gold beneath a puffy head that slowly dissipates. Nosing this brew doesn’t summon an aroma as clean or powerful as other versions, but pear and lemon hop scents do manage to pull away from the sticky alcohol notes. Sturdy and big, the swallow kicks off with heavy sugary sweetness and syrupy orange and pear notes, before a countering hop kick grips the sides of the tongue and leaves behind a peppery, floral taste. Loaded with sweetness and alcohol, Delirium is an excellent introduction to the power behind this Belgian style.

This brew isn’t cloudy (as it should be) even when poured aggressively, and wears a dark brown color with a rocky, tan crown. Overripe plums dominate the aroma; the expected banana and clove aromas are noticeably absent. The flavor also departs from the style, with harsh, deep toasted malts and only subtle caramel sweetness. What the brew lacks in complexity is made up for in the toasted malt character, which lasts deep into the aftertaste. This light-bodied brew finishes clean with mild peppery spice.

Served in a traditional wheat beer glass, the pour yields a towering head; the carbonation swirls while the foam slowly dissolves back into the liquid. Amazing head retention. Trademark Hefeweizen appearance: cloudy orange. Big fruity aroma of ripe bananas, soft clove and a waft of wheat. Smoothness is sublime as it rolls around the mouth with moderate body. Solid bread malt flavor with the wheat character obviously dominating, fruitiness coming big in the middle with ripe bananas and a hint of lemon. Very mild hop bitterness pushed down by a medium-sized spicy clove phenols that do most of the balancing. Neutral yeast flavor and lingering wheat appear in the dry finish.

Ripe sugary nectarines, a powdery yeast and a light phenolic clove and medicinal mix in the aroma. Alcoholic esters with a touch of solvent linger in the back of the nose. Peppery clove spiciness with a warming alcohol right behind it. Estery with a hint of solvent-like character in the high level of alcohol. Malt lays down some sweetness with a thick drying pale graininess, fruity flavours of mango and pear flash on the taste buds. Bitterness from the hops melds with the thick powdery yeast and bring the mouth to a slightly dry finish. Smooth and creamy with a medium to high carbonation. One of my favourite Belgian style pale strong ales, a bit over the top for some people and one that I respect by sipping through the night.
