Its color is as vibrant as the sun, and its flavor is fresh and aromatic. Oak barrels filled with this precious liquid were carried down the steep streets of this picturesque town on muleback, allowing their contents to drip out, which was then used by those who, for this reason, became known as "gotereros" (drippers). When it rained, the roads became muddy, but this was no obstacle for those who wanted to visit the estancos (estancos), as the liquor stores were known, giving rise to the phrase that the people of Manzanares adopted as their own: "De culos pa´l estanco" (From asses to the liquor store).
