We see a lot of Caol Ila on the independent market in a variety of finishes, but it’s been a long time since we’ve seen one that complements the quintessential Caol Ila profile so well. In fact, this is an absolutely killer cask that takes all the best features of Caol Ila and ramps them up to eleven. The oloroso influence is just spectacular, starting with the dark amber color that suggests a much older spirit. The aromatic profile is huge but balanced, showcasing head-spinning complexity. It leads, of course, with big forest-fire smoke (it is Caol Ila after all), then comes burnt walnut wood, diesel fuel, dark tobacco, dark chocolate brownie, varnish, and old leather. It can take a drop or two of water, which brings out even more nuances of smoked bresaola, dried dates, gun smoke, roasted chestnuts, balsamic, prunes, and pine tar. The palate mirrors the nose note for note in its huge, earthy complexity. Despite the flavor intensity, it’s still remarkably balanced and medium weight, while the addition of the water brings out layers of pecan pie, cola, burnt cherry, volcanic rocks, dark espresso, and bay leaf. It’s simply incredible how much the cask surpasses its age statement in depth, character, and complexity. It’s not a style for everyone, but if you know what you’re getting into here, it’s unequivocally stunning.
