The blend is 81% Sauvignon Blanc and 19% Sémillon, native-yeast fermented in barrel. Grapes are whole-cluster pressed on a gentle Champagne cycle, with most lots fermented in stainless steel and a portion in 10% new French oak, aged sur lie with bâtonnage for four months.
