Bright and zesty, with oyster-shell minerality leading the charge, followed by tangerine and lemon zest, white flowers, and ripe orchard fruit, all wrapped in a velvet blanket and balanced by zippy acidity on the long, drawn-out, satisfying finish. The blend is 81% Sauvignon Blanc and 19% Sémillon, native-yeast fermented in barrel. Grapes are whole-cluster pressed on a gentle Champagne cycle, with most lots fermented in stainless steel and a portion in 10% new French oak, aged sur lie with bâtonnage for four months.
