Long-time B-21 Burgundy aficionados know Domaine Servin as a bastion of the classical Chablis style. Year in and year out, this exceptional estate holds true to the characteristics that have earned the region its legions of adoring fans. Even in a warm vintage like 2023, the domaine's extensive range of wines maintain the chiseled cut and energy that fans of the old school know and love.
These are proven performers that deliver quintessential Chablis style and first-class QPR. A standout trio of 1er crus is lead by the "simply beautiful" Montée de Tonnerre that garnered 94 points from View From the Cellar's John Gilman and 90-93 points and an Outstanding designation from Meadows of Burghound, who notes its "The super-sleek, intense and equally attractively textured flavors " The crown jewels in the Servin stable are undoubtedly the Les Clos and Bougros Grands Crus, both of which are superbly structured renditions that collectors will love to have in their cellars for years to come.
As the region's recent growing seasons have tended to favor a more modern, upfront style, it's becoming increasingly harder to find Chablis expressions that capture the very best of what made the region famous in the first place, but Domaine Servin is still holding true to form, and you'll be hard-pressed to find more transparent terroir character in the 2023 vintage than this line-up on offer today.
Domaine Servin’s Vaillons is entirely hand-harvested, with these vines ranging from twenty-five to more than thirty-five years of age and right in the sweet spot of their prime. This cuvée is raised entirely in stainless steel tank. The 2023 Vaillons offers up an outstanding nose of apple, pear, a touch of anise, citrus peel, chalky soil tones, white lilies and a topnote of beeswax. On the palate the wine is bright, focused and full-bodied, with lovely depth of fruit at the core, a fine girdle of acidity, excellent mineral drive and grip and a long, impeccably balanced and complex, vibrant finish. This is excellent juice.

The mildly exotic aromas of ripe orchard, including white and yellow peach, apricot, lychee and passion fruit, are cut with citrus and tidal pool nuances. There is once again fine volume and excellent richness to the delicious medium-bodied flavors that possess a subtle minerality on the bone-dry, youthfully austere and borderline tannic finish. At least a few years of cellaring should be beneficial.

The 2023 Chablis Vaillons 1er Cru has a pretty bouquet, quite floral with yellow plum and a touch of brioche. The palate is fresh and crisp, not the most complex than the Les Fôrets with a touch of spice on the finish. Drink over the next 5-6 years.
