Domaine Servin’s Vaillons is entirely hand-harvested, with these vines ranging from twenty-five to more than thirty-five years of age and right in the sweet spot of their prime. This cuvée is raised entirely in stainless steel tank. The 2023 Vaillons offers up an outstanding nose of apple, pear, a touch of anise, citrus peel, chalky soil tones, white lilies and a topnote of beeswax. On the palate the wine is bright, focused and full-bodied, with lovely depth of fruit at the core, a fine girdle of acidity, excellent mineral drive and grip and a long, impeccably balanced and complex, vibrant finish. This is excellent juice.

The mildly exotic aromas of ripe orchard, including white and yellow peach, apricot, lychee and passion fruit, are cut with citrus and tidal pool nuances. There is once again fine volume and excellent richness to the delicious medium-bodied flavors that possess a subtle minerality on the bone-dry, youthfully austere and borderline tannic finish. At least a few years of cellaring should be beneficial.

The 2023 Chablis Vaillons 1er Cru has a pretty bouquet, quite floral with yellow plum and a touch of brioche. The palate is fresh and crisp, not the most complex than the Les Fôrets with a touch of spice on the finish. Drink over the next 5-6 years.
