As I have mentioned in the past, the Vieilles Vignes bottling from François Servin hails from the superb lieu à dit of les Pargues, which was once ranked on the same level with many of the premier crus, but got left out when the AOC was adopted in Chablis. These vines are fifty-five years of age now and the wine is half barrel-fermented and half fermented in stainless steel. The 2023 version is gorgeous, offering up a vibrant and precise bouquet of lime, tart orange, flinty minerality, dried flowers and a touch of anise in the upper register. On the palate the wine is crisp, pure and full-bodied, with a superb core of old vine fruit, great mineral undertow and grip, impeccable balance and a long, complex and electric finish. This is clearly the quality equivalent of a top premier cru. Great juice and a superb value!

An admirably discreet application of wood easily allows the aromas of apple, sea breeze, petrol and citrus confit to be appreciated. The old vines are very much in evidence as there is fine density to the utterly delicious, succulent and palate soaking flavors that possess a highly seductive texture while displaying outstanding length on the bitter lemon and balanced finale. This will need to develop better depth but it's clearly very promising and also warmly recommended. *Outstanding, Top Value*

The 2023 Chablis Vieilles Vignes Massale is 30% aged in used barrels. This has a fragrant bouquet that I much prefer to Les Pargues–more delineation and mineralité coming through here. The palate is well balanced with a fine bead of acidity, good concentration with a touch of sour lemon towards the finish.
