This classic expression of Chablis boasts aromas of ripe apple and grapefruit, oyster shell and minerals. The texture is lively and bright, with a classic equilibrium (alcohol at 13% and acidity of 5.5 g/L), yet the wine also shows a charmingly expressive, generous side. Should open up in three years and drink well over the next 20.

The 2023 Chablis—sourced chiefly from vineyard parcels that border La Forest—continues to distinguish itself as one of the finest examples in its category. Its bouquet weaves together citrus oils, pear and white peach. The medium- to full-bodied palate is ample and textural, displaying considerable depth and energy that persist through to a long, sapid finish. While it can—and undoubtedly will—be approached young, it possesses all the prerequisites for graceful evolution, bearing in mind that a wine’s longevity depends not on the vineyard-site name alone but on the way it is worked and made.

The Chablis AC from Monsieur Dauvissat is also excellent in 2023. This wine hails from a few different parcels, but the majority hails from a lieu à dit just below the premier cru of La Forest. The wine delivers an outstanding aromatic constellation this year, hopping from the glass in a blaze of lemon, green apple, oyster shell, a beautiful base of limestone minerality, citrus peel and a topnote of spring flowers. On the palate the wine is pure, full-bodied and again, sports truly exceptional acids for the vintage, with a superb core of fruit, excellent mineral undertow, excellent focus and grip and a long, complex and impeccably balanced finish. Great juice.

Mid lemon in colour, and showing more flesh than the Petit Chablis on the nose. Still absolutely a baby of course, but there are many more layers here. Plenty of different types of apple, a long even finish, showing the sunshine but well tamed. A Dauvissat classic in the making.
