Long-time B-21 Burgundy aficionados know Domaine Servin as a bastion of the classical Chablis style. Year in and year out, this exceptional estate holds true to the characteristics that have earned the region its legions of adoring fans. Even in a warm vintage like 2022, the domaine's extensive range of wines maintain the chiseled cut and energy that fans of the old school know and love.
Our recent allocation of the 2022s comes in at extremely sharp pricing for our private clients, offering the chance to stock the cellar with proven performers that deliver quintessential Chablis style and first-class QPR. A standout trio of 1er crus is lead by the "well-defined and precise" Butteaux that garnered 91-93 points fromVinous' Neal Martin and 90-93 points and an Outstanding designation from Meadows of Burghound, who notes its "focused power" and "impressively long and balanced finale." The crown jewels in the Servin stable are undoubtedly the Les Clos and Les Preuses Grands Crus. With 95-point potential from both Meadows and Martin, the Les Clos is a resounding success in the vintage, "compact, mineral-driven, and built to age" according to Meadows, a crystal-clear expression of this hallowed terroir. Les Preuses is no less impressive, a "strikingly textured and hugely long" rendition that collectors will love to have in their cellars for years to come.
As the region's recent growing seasons have tended to favor a more modern, upfront style, it's becoming increasingly harder to find Chablis expressions that capture the very best of what made the region famous in the first place, but Domaine Servin is still holding true to form, and you'll be hard-pressed to find more transparent terroir character in the 2022 vintage than this line-up on offer today. |

François Servin’s vines in Butteaux are some of the oldest he has in his fine lineup of premier cru vineyards, as they range from thirty-five to fully fifty-five years of age. Monsieur Servin hand harvests them and raises his Butteaux solely in stainless steel. His 2022 version tips the scales at a very civilized 12.5 percent octane and delivers a deep, vibrant and complex bouquet of pear, lemon, green apple, a beautiful base of chalky minerality, anise and a topnote of citrus blossoms. On the palate the wine is pure, full-bodied, zesty and complex, with superb depth of fruit at the core, lovely mineral drive and cut, a fine spine of acidity and great length and grip on the impeccably balanced finish. This is outstanding juice!

The 2021 Chablis Les Butteaux 1er Cru matured in 450-liter and regular barrels, having been racked two weeks before my visit. Mineralité comes through the well-defined and precise bouquet much more than the Vaillons. The palate is well-defined with a lovely, slightly honeyed texture, flecks of dried apricot and quince segueing into a yellow plum and nectarine-tinged finish. This is very promising and successfully shrugs off the warmth of the growing season.

Cool and restrained aromas of petrol, quinine, essence of pear and a touch of mineral reduction introduce delicious medium-bodied flavors that exhibit focused power on the lightly austere, balanced and impressively long finale.
