The 2022 Cabernet Shiraz Bin 600 has a natural opulence thanks to its plush blueberry, blackberry and mulberry aromas with just a touch of licorice. This has a velveteen palate with choc-berry flavors and balanced, chewy yet pliable tannins with solid length. This is already drinking well but has potential.

Featuring grapes from 1998-planted cuttings of Magill and Kalimna vines, Bin 600 is Penfolds’ Californian take on the Aussie blend – this year 66% Cabernet and 34% Shiraz – from estate vineyards in Paso Robles (Camatta Hills) and Napa Valley (Beringer) as well as sources across Sonoma. More successful than the new French Winemaking Trial 543 but far from the quality of Bin 389, this fourth iteration has its place in the portfolio and should continue to improve. The 16 months’ ageing in American oak hogsheads, 45% new, delivers a mellow, rich butterscotch embrace rather than imposing structure to the dense sweet berry compote flavours, with structure from chalky tannins. Released at £45.
