The 2021 Bin 600 Cabernet Shiraz is a blend of 85% Cabernet Sauvignon and 15% Shiraz, coming from Napa Valley and Paso Robles. Deep garnet-purple in color, it offers up a classic nose of cassis and plums, plus suggestions of cedar chest, graphite, black pepper, and underbrush. The full-bodied palate bursts with bold black fruit and great tension, textured with plush tannins, finishing long and lifted. It was aged for 16 months in American oak barriques, 53% new.

Larger in stature and attitude than an Australian version of a Cabernet+Shiraz blend, this Californian 'claret', as seen through the Penfolds prism, becomes a more curious beast with each passing vintage. Vines imported from the Barossa’s historic Kalimna vineyard have now reached maturity in the Napa, at Creston 600 Ranch (now called the Camattat Hills Vineyard), and produce rich fruit of distinction. The 85% Cabernet Sauvignon component is typically robust and assertive, with pronounced blackberry and bramble, but the 15% Shiraz addition now plays a stronger role in the flavour profile, adding plush red berry pleasure and red liquorice high notes.
