A lush lychee flavour profile with a fierce mineral component, like the sensation of licking a wet stone. This Chardonnay was aged 10 months in 100% French oak, 34% new and 64% neutral. It was allowed to go through malo, but only to about 75%, leaving room for a bit more linearity. The ocean fog contributes to this flavour profile, too, with its cooling ocean breezes that help the grapes retain their acid profile.

Layers of fruit, vanilla, butterscotch and oak toast give this full-bodied wine plenty to explore. Its almost-thick texture wraps in poached pears, toasted almonds and honey flavors that fill the palate and linger on the finish. The sweet effect of oak makes it suitable in lieu of dessert.
