The 2021 Cabernet Sauvignon is a very old-school wine. Tart red berry fruit, bay leaf, cedar, pencil lead and fine, black-tea-like tannins unfurl in a wine that harks back to a different time. A relatively short stay in barrel of 12-14 months, followed by two years of additional bottle age, yields a wine that feels very ready to drink today, but based on the older wines in this tasting, the 2021 will surely age well. This classy, delicious Cabernet is all charm.
