Pale yellow, with a nose that evokes toasted cumin seed, freshly baked rolls, yellow plums and Meyer lemons. The palate on this Pecorino becomes more intensely citrus and briny, with unapologetic acid and a heady floral and woodsy component, like pine barrens opening suddenly onto the coast.
