Tasted again, but this time at the estate where it was grown, made and cellared, the 2021 Cabernet Sauvignon is floral with a darker core, possessing a mineral-driven expression with hints of minty herbs, turned earth and oak. Medium to full-bodied, the wine offers a firm tannic edge that will need more time to tame, or it can be enjoyed with food now. The wine offers notes of graphite, pencil shavings and fresh fruit that turns a touch tart on the finish, proving that another year in the bottle will do wonders for this beauty. Just over 50,000 bottles were filled after resting in 300-liter French oak barrels, 40% new.
