The 2021 Pedro Ximénez de Añada from Montilla-Moriles opens with aromas of hay, herbs, dried fruit, fig, date, caramel, resin and wood. Sweet and concentrated, almost syrupy in texture, it is long with commanding sweetness that stretches across the palate.

Intense aromas of fig, dried apricot, quince and candied apple envelop the nose along with hay and caramel-dusted forest floor. The wine is concentrated and layered in a way that can only be appreciated when enjoyed over an evening - not just in one sip.

Thick, medium-deep copper hue. Pure raisin essence with honeyed apricots and nutmeg. Unctuous, waxy and luscious with just moderate acidity, this is still surprisingly balanced, retaining a rich, supple mouthfeel and texture. For those who love hedonistic dessert wines without high acidity. Makes me think of Christmas puddings. Drink now.
