Consisting of mostly Grenache with Mourvedre and small amounts of Syrah and Cinsault, Xavier sourced the Grenache for the 2019 CDR from 100-year-old vines, blending it with Mourvedre from 60 year old vines and Syrah from vines averaging 45 years, all organically grown and many at higher altitudes in the northern Vaucluse. After co-fermenting the grapes in stainless steel, Xavier aged the lush 2019 Cotes du Rhone Vielle Vignes in concrete vats, preserving the purity of the fruit and yielding smooth, supple tannins with a savory, mineral-tinged finish.
