Grown in the vineyards of Colmar, the capital of Alsatian wines, the Pinot Gris is a grape varietal with a thousand facets that gives drastically different wines depending on the conditions in which it grows and the hand of the winemaker. In this case, Schoffit made a choice to create a dry, gastronomic Pinot Gris that has as little as 3g/L residual sugar and high 8g/L acidity for the 2014 vintage. Those who prefer a more velvety touch will still enjoy this dry-styled Pinot Gris in other vintages that usually contain around 12g/L residual sugar for about 6g/L natural acidity.
