Apostolos Spiropoulos isn’t afraid to let a little of moscofilero’s reddish skins color his wine. In doing so, he can create a white like this 2014, which is spicy and floral, yet also has a richness of texture unusual for the variety. It feels opulent, an earthy richness giving it enough breadth and savor to match roast pork loin.
