We've had a noticeable jump in Calvados interest in the past several months, and today's offer on an elusive 2008 vintage expression should kick that into another gear. Domaine du Tertre isn't on everyone's radar, but they should be. Planted to approximately 600 trees of 40 different varietals, Domaine du Tertre's artisan approach begins in the orchard. The domaine's main product is cider, which forms the base for their utterly stellar vintage Calvados. Distilled once a year in September, the additive-free new make is left to age at a full 70% ABV in oak sourced from Perche and Cognac, where a natural reduction of alcohol occurs at approximately 3% per year. The astounding finished product is bottled at a natural cask strength with no proofing down. From a "super complex" aromatic profile to an "unbelievably graceful palate," from a "foundation of beautiful minerality" to a "lifted, seemingly endless finish," this is a truly spectacular expression of Calvados that every serious spirits fan should taste at least once. There's no other way to put it.
