This light straw-color brew with a soft, white head smells of a baker’s concoction: Yeasty, unbaked dough aromas with funky Brettanomyces notes fill the nose. Take a big sip of Hottenroth to reveal a fairly complex collection of sensations: Up front, grain, yeast, and sourness merge on the tongue to create a mixture evocative of earthy, tart lemonade. There’s little transition here, which is quite enjoyable as you sit back and let the flavors work on the palate. The tart-grain combination rides to the back of the mouth, as a rising mustiness clings to upper regions of the palate. When it’s over, a lingering sourness remains in the back, beckoning another mouthful.
