Harvest began on August 3rd, the first day Remi Cohen joined the company after serving as COO Director of Winemaking & Vineyards at Cliff Lede Vineyards for many years. The night the August fires broke out was the night they picked the last of their grapes for their sparkling wine program. Yields were light coming into the drought vintage, but there was good concentration. Think Audrey Hepburn in Breakfast at Tiffany's, and that's the style aim: Elegant, beautiful, and timeless: heady flinty minerals, ripe yellow apple and pear with a hint of spring flowers. Fantastic lemon meringue notes build on the palate while the solid base of laser-focused acid helps keep everything focused and linear—9g/L residual sugar.
