This exceptional parcel planted in 1922 faces the small Chapelle de Pouilly, just next to the domaine's cellar. With no herbicides used at the domaine, the vineyard is plowed several times a year to promote expression of the terroir in the wine. The harvest is done manually by a loyal team to the Domaine. The grapes are pressed at low pressure without crushing, without pumping, in a pneumatic press of the Bucher brand. The vinification is done in two parts: 25% in new oak barrels, 75% in two-vintage used barrels for 12 months. Batonnage is done without excess oxygen without loss of CO2, once a month after malolactic fermentation. Bottled at the optimal lunar cycle. It is best to decant, old or young, to fully express this jewel of Burgundy.
