A selection of the best parcels from the renowned terroir, Aux Bouthières that has clay-limestone atop a white marl subsoil. The vinification is done very slowly at low temperatures. New barrels, 1 year and 2 years are used to keep the freshness and gain complexity. For the remarkable level of quality, the most advanced winemaking techniques are implemented: Pumping of must in fermentation that allows precise micro-oxygènation, temperature control on all barrels and during élevage, no oxygenation so the wine does not lose valuable CO2. "Aux Bouthières" is characterized by its aromatic finesse, fruity and floral with a subtle minerality that gives a lot of freshness. Its aging potential is remarkable. It is best to decant, same old, so that it is fully expressed.
