The 2014 Chablis Cuvée les Pargues, which is distributed exclusively in the United States and is closed with screwcap, has a light, cooking apple and grass-clipping bouquet. Austere in a positive sense of the word. The palate is fresh and taut with a pleasant spicy entry, building with confidence in the mouth to a long finish. This is worth seeking out.

Pale green-yellow. Dusty stone, white peach, grapefruit, orange blossom and minerals on the inviting nose. Richer and more layered than the Chablis Sur Le Clos, with flavors of lime and spearmint dominating. Supple in texture but a citrussy edge of acidity frames and carries the fruit. Less harmonious now than the Sur Le Clos in spite of its greater richness, this will also need a year or two of patience. The acidity here is 4.9 grams per liter, according to Cameron. This wine and the Petit Chablis and Sur Le Clos are done entirely in stainless steel.
